In the heart of New York City, where culinary dreams are woven into reality, stands Eleven Madison Park—a gastronomic sanctuary that has redefined the very essence of fine dining. The restaurant overlooks Madison Square Park, one of the most beautiful parks in Manhattan, and sits at the base of a historic Art Deco building on the corner of East 24th Street and Madison Avenue. Under the visionary leadership of Chef Daniel Humm, this Michelin-starred restaurant has embarked on an audacious journey—one that transcends flavours, challenges conventions, and celebrates the artistry of plant-based cuisine.
Initially designed by Bentel & Bentel, Eleven Madison Park opened in 1998 and was owned by restaurateur Danny Meyer. In 2006, Chef Daniel Humm and Will Guidara joined the team, and in 2011, they purchased the restaurant from Meyer. The restaurant group’s name is Make it Nice. It underwent a complete redesign in 2017 and has continued to evolve.
In the year 2011 the restaurant was given first Michel Star by Michelin Guide USA and to year 2022 restaurant got and was able to hold on to three Michelin Stars despite switching to All-plant-based menu.
Picture this: a freshly baked, delicately crisped vegan roll graces your table. Its golden crust whispers promises of delight. But what truly enchants is the accompanying faux butter—a creation so ethereal that it defies reality. With each bite, Eleven Madison Park transports you to a realm where plant-based indulgence reigns supreme.
Behold the quenelle of tonburi—an exquisite mimicry of caviar. Plated alongside horseradish cream and a radish tostada adorned with pumpkin seed butter, it’s a symphony of textures and flavours. The seitan, braised to toothsome perfection, rests within a spinach embrace, crowned by morels. Luscious sauces dance around this masterpiece, elevating it to celestial heights.
Dessert at Eleven Madison Park is akin to a poetic crescendo. Imagine a frozen confection—cherry blossom and rose entwined—its delicate petals kissed by strawberries. As you savour this finale, you realize that luxury knows no bounds, and creativity blooms even in the frostiest of landscapes.
